Inspired by Food Scraps

If you're like me and eat an exorbitant amount of fruits and veggies you find you either have the most amazing compost gold, or a whole lot of food scraps you feel bad about pitching. Lindsay-Jean, a client turned online friend, is an editor at Food52 and has posted a multitude of amazing recipes! The above tomato skins illustration is inspired by one of them. Tomato Skin Salt! I can't wait to try this the next time I'm blanching and canning my garden tomatoes.
